TESS... No need to get flustered in the kitchen, these fabulous fish recipes are wonderful, super simple and ready in 30 minutes.

RED MULLET EN PAPILLOTE

The healthiest way to eat fish.

4 Red Mullets cleaned 

1 bulb of fennel sliced 

1 blood orange, peeled and segmented (regular oranges will do)

1/2 glass of dry white wine

Sea salt & black pepper 

Method.

Cut 4 pieces of baking paper into squares – approx. 30cm. In the middle of two paper squares arrange fennel, blood orange slices, scatter over a few caper berries, and drizzle over with olive oil. Season the fish with salt and pepper and push dill into the cavity. Lay a piece of paper over the fish and start crimping it together around the edge to form a circle. Leave a gap and pour white wine into each parcel and fully seal before placing on a baking sheet. Bake for 15-20 minutes (200c).
