MOTHER EARTH MEET SUSANA CAMACHO, THE WOMAN CHANGING THE WAY IBIZA WILL EAT FOREVER

 

What is your food background?

I am a plant-based chef and instructor who grew tired of not being able to get all the organic produce I wanted on the island, so I decided to open my own store with everything under one roof. 

How did you begin improving the organic awareness in Ibiza?

My first step was to explain to the farmers how the use of pesticides had to stop as they may as well just be using poison on our food. They of course complained how difficult it was growing organically claim- ing the flies killed all their produce, so I had to educate them about growing the natural way. Little tips like putting garlic in the middle of strawberries or basil in between tomato vines which keep the insects away.

Have people taken to the organic way quickly in Ibiza?
Absolutely. I have noticed how the young people have seen how sick their older relations get by eating junk food all their lives and by simple changes in their diet, they get better. They know things have to change. Feeding ourselves is obviously important, but to feed ourselves con- sciously to have good health and live with energy, is an art.

How are you educating people?

Our workshops are expanding all the time and as a chef I love to show people how they can cook with real foods. By this I mean vegetables, cereals, seeds, fruit and fresh produce. You do not need processed food or dead food as I call it. How can you keep your body alive if there is no nutrition in the food you are feeding it? We are teaching the schools also, I have chefs asking me how to make gluten free bread so I show them; ‘you don’t have to pay me’ I tell them, ‘this is for the children!’ And then of course we have my professional vegan based cooking Academy opening in October for chefs, we have had a lot of booking already and are so excited.

How else are you helping conserve the island?

Well zero waste is obviously something we have to think about. In our stores we only use glass containers for the take away food and always encourage our customers to use the same bag for every shop. Last week I was helping to load a lady’s shopping into a box and she said ‘Susana, why are you putting all my lovely new items into an old tomato box Susana?’ I said to her, ‘have you any idea how long a plastic bag takes to decom- pose? 50 years! You won’t be here so please think about the next generation!’. She then happily took the box.

Tell us about the new superstore... 

Yes, it has just opened on the road into Santa Eulalia. A warehouse styles store for hotels and restaurants where they can find over 8000 organic products, local fruit and vegetables. People are now real- izing how these products are increasing the quality of their menus.

And finally, for the people reading this who think it’s too late to get healthy, what is your message?

It is never too late! It is quite magical how your body answers you when you give it a little goodness, it’s like a miracle going on inside you. We are killing our enzymes so quickly but something as simple as a salad does so much. It’s enough to keep these little cells alive and allows them to make more cell babies. Let’s start helping our- selves and world from today.
