CORICANCHA Ctra Las Salinas KM 2.7. Tel: +34 971 07 42 26

Perched on the edge of the magnificent Las Salinas salt flats, you cannot help but feel privileged to be able to dine with such a unique viewpoint. Ensure you arrive in time for the breathtaking sunsets, as while you sip cocktails and ponder the menu you’ll witness an astonishing spectrum of molten golden light reflecting on the water. A truly spectacular experience. Coricancha quite aptly means ‘temple of the sun’, making reference to one of the most revered Inca temples in Cusco, Peru. The restaurant specialises in Nikkei cuisine – an artful fusion of umamipacked Japanese and Peruvian dishes that respect the traditions of these two very old culinary art forms. An innovative menu offers a bold amalgamation of practices inspired by the four elements: water, earth, air and fire with all ingredients and recipes carefully sourced from Peru, Japan and Ibiza. As well as delicately balanced uramaki and nigiri sushi, there is refreshingly glorious ceviche - then dive into chargrilled octopus with roasted aji amarillo emulsion, criolla salsa and lemon leaves. Or for meat seekers try the liquorice charcoal dusted duck breast with mandarin gel, rocoto and black garlic. This is a unique gastronomic journey through ancient flavours and an unforgettable dining experience. The Moonlight Garden with chilled Balearic beats is another invitation to immerse yourself in a dream-like atmosphere taking your journey from the Peruvian desert and the exotic far east back to the homelands of Ibiza.
