Oliver Pérez, executive chef at Mariner, has allowed us to sneak into his kitchen to see how he prepares the delicate starter of courgette flowers stuffed with cod brandada. “The flowers must be picked at dawn, because during the day they open up and can’t be stuffed. First we wash and dry the flowers very carefully in order not to break them. We put them aside and then we make a classic ‘cod brandada’, which is basically a mix of salt cod and olive oil that we put into the flowers using a pastry bag. Then the flowers are covered in a light tempura and fried in really hot vegetable oil. To accompany the cod-stuffed flowers we create ‘honey air’, a mix of water and honey with a teaspoon of soy lecithin.”
