COW COMFORT GRANJA SANTA GERTRUDIS HAS BEDS FOR THE COWS ON WHICH TO SPRAWL AND LOUNGE

La Granja Santa Gertrudis is a mixed farm of idyllic proportion, situated among 20 hectares of land in the heart of Ibiza: Santa Gertrudis de Fruitera. The local village and surrounding area stands out as one of the most peaceful and picturesque on the island. In the village you’ll discover a range of independent shops, galleries and cafés, all reflecting the artistic and bohemian heritage of the area. The surrounding landscape, meanwhile, is a pastoral vision of traditional Ibiza, with narrow country lanes, whitewashed farm buildings, fields of red soil and green crops, and an abundance of wildlife. The farm, which supplies a range of produce for Ushuaïa, is a short drive from the village centre, a little way north off the road to Sant Llorenç de Balàfia. At the core of its business model is a commitment to the production of high-quality, local products. Work began in 1973, and only milk was produced at that time. Over 40 years later, the farm now produces a ran ge of dairy products, and this year have begun to produce eggs and meat. Everything is free range, organic and produced in a sustainable way, with the utmost attention given to animal welfare, meaning the quality of the produce is exceptional. The stars of the show are the three breeds of cattle: Friesian, Aberdeen Angus and Wagyu. La Granja Santa Gertrudis was the first to introduce Aberdeen Angus and Wagyu cattle to Ibiza, and they are still the island’s foremost producer. The concept of ‘cow comfort’ is central to the farm’s approach to rearing all three breeds: when they aren’t resting in the shade of the farm’s pine forests, the cows are given beds to lie on and automatic massage machines to use any time of day. They are also fed on an enriched hay mixture, which ensures that they are always in peak condition. The prime condition of the cows is reflected in the quality of the beef they provide, which is a beautifully marbled, ruby-red colour. Pressure, temperature and humidity controls are carefully monitored to provide a perfect environment in which to age the steaks for 45 days, which gives the meat both a soft texture and nuanced flavour. Next time you have a burger or steak at Ushuaïa, you can be sure that it has been produced with an extremely high level of care and expertise and that the team at La Granja Santa Gertrudis take exceptional pride in the work that they do. In addition to beef cattle, the farm rears an historic breed of Iberian black pig, the meat of which is used to make outstanding sobrasada and butifarra, among other things. They also bottle 1000 to 3000 litres of milk a day, depending on the time of year, and use a proportion of the raw milk they take to make yoghurt, cream and a range of traditional cheeses.
